Recipe- Vegan Purple Sweet Potato Pie, but more summer-y
I don't want this to be the typical Pinterest long winded story time about going on walks in the fall and finding pretty rocks. But! Sweet Potato pie is typically made with 1- orange sweet potatoes, and 2- warm spices like cinnamon, cloves, and what not. It's hotter than Megan Fox outside! So no warm autumnal spices!! This is mainly just the pie filling, so the crust being vegan is up to you! And any toppings!
Ok so for the crust, I had some leftover chocolate cookies that were not that good, so ! blended 9 of them up into a kind of powder, and added some vegan butter and cayenne pepper powder. All of this is not very exact, I would just find a cookie crust recipe and use that.
The pie filling is the real star here! You will need!
2 lbs of purple yams (available at Dekalb Farmer's Market), 3/4 cup canned full fat coconut milk (make sure it isn't separated by not keeping it cold and shaking before using), 1/3-1/2 cup maple syrup, 1.5 tablespoon corn starch, 2 tablespoons lime juice, 1 teaspoon grated ginger, pinch of salt, and pinch of black pepper, and any other spices/small things you think might be fun! Maybe mint would be good, or basil! Or grapefruit juice/ zest!
What you need to do
1.Peel the yams and chop them up into small chunks, like the size of tea lights. Fill a pot of water and put in yams, bring to a boil and let them hang out till they're soft. You could bake the potato skins and make a pretty good snack if you feel so inclined.
2. Put now softened yams in a food processor or blender, and blend! You might need to do it in batches. Here is also where I would preheat the oven to 350 degrees. Also! Save the water from your yams and water your plants- the water has starch in it which should help them!
3. Mix all the other ingredients (coconut milk, maple syrup, cornstarch, spices and such) separately in a bowl and gradually add them in until everything is combines. Taste the mixture and make any adjustments you might want. Mine wan't too liquid-y.
4. Pour the filling into the pie crust you made and bake for 35-45 mins- I baked mine for like 40 mins and it was too solid, but my filling wasn't very liquid-y either. You want there to be some looseness in the center. If there is no movement it still tastes good, and the texture isn't disgusting!
5. Take it out and serve after it has cooled down some. It is really good with any cream on top, and a squeeze of lime juice (which makes the dark purple turn into a brighter purple!) Yogurt or ice cream are both good options, but again, there's probably some other fun stuff to put on top!
I had left over filling that I froze, I don't know what to do with it! Maybe make more pie, or use it as cinnamon roll filing! Anyways, that's all I have!
